Teresa is one of Australia’s leading authorities on healthy cooking, a friend and one of the most inspiring people we know – we’re so happy to have her onboard

Teresa is the Founder and Director of The Healthy Chef, a company that creates purely delicious functional foods for optimum health + wellbeing. She’s also been a qualified chef for over 25 years and has worked and trained with some of the best Chef’s and restaurants in the country. To compliment her training, Teresa also studied nutrition at Deakin University and became an internationally accredited fitness trainer with the Fitness Institute of Australia. She has combined her diverse knowledge of food + cooking, diet and exercise to develop her recipes and functional food products to help promote optimum health + wellbeing.

To find out a little more about Teresa, we asked her the ‘bellaMUMMA questions…

You, in three words? Determined. Passionate . Driven.

What inspires you? Anything from nature is my inspiration. It could be a box of fresh seasonal asparagus in the markets, plump white peaches or even a beautiful boquet of David Austin roses. I’ll often come home and create a off the cuff recipe from my inspiration such as white peach and raspberry crumble or a coconut vanilla cake garnished with pale pink rose petals.

What’s your work title? The Big Kahuna is what I’m sometimes referred to in the office – My husband started the craze and now it’s caught on. I’m the founder and Creative Director of The Healthy Chef.

What was your first ever job?
 At 14 I got a part time weekend job at the local bakery. It was awesome! I got to do fun things like make doughnuts and scones, garnish cakes, make sandwiches and serve customers.

What did you want to be ‘when you were little’? I wanted to be an artist from about 6 yrs old. I wanted to be a painter and exhibit my paintings all around the world. My mum was an artist back in Poland, she was amazing and she taught me how to draw, paint and use colour.

How did ‘Healthy Chef’ come about? Healthy Chef has been a life long journey of creation. My husband Paul and I moved to Sydney from Perth and we opened the The Healthy Chef Café, in Avalon on Sydney’s stunning Northern Beaches. I wanted it to be a place where people could be nourished and enjoy themselves – sort of like my experience of growing up with my great aunt and uncle – my café focuses on fresh, simple healthy food. I played French music on the iPod when I baked my homemade granola, cookies and banana breads as it made them look and taste better. It was important for me to put positive energy into the food I gave my customers so they felt great eating it. My café was also a local hangout for celebrities and athletes such as Elle McPherson, Megan Gale and Kelly Slater.
After selling the café some years later, I launched The Healthy Chef Functional Food Range made from the best natural wholefoods available on the market, to support optimum health and wellbeing. Today, I bring the simplicity, culture and freshness of what my aunty and uncle taught me so many years ago and combine it with my training as a chef for my recipes and whole food product range.

Explain your usual day? I wake up, jump into the shower, drink a large glass of water and have a shotof wheatgrass then go for a power walk around centennial park. When I get home I hydrate some more and enjoy breakfast. It could be a power smoothie made from organic berries, frozen banana, almond milk and Healthy Chef Super food and Protein. I need my protein in the mornings, it keeps me energized all day….if it’s not a smoothie it could be a slice of quinoa chia bread spread with almond butter. I love my matcha tea and drink a cup most mornings to get things started. It’s awesome with coconut water as a pre workout drink.
Everyday we have a work meeting of what’s on for the day, then I spend the day answering emails, designing and researching formulations for new products, testing recipes for my new cookbook or app.
Afternoons is time for my kitchen fun, experimenting with new and healthy recipes for the team to taste before Paul shoots the photos for The Healthy Chef website and cookbooks.
We have happy Fridays for the whole staff and we’re often all going out for a lovely lunch or breakfast. We all work crazy hours and extremely hard, it’s a small team and its important for me to have a happy creative and positive work space. Everyone one of our team is passionate about health….we inspire each other and we laugh a lot.
I try and finish work by about 6 or 7…it depends what’s on….To relax I love going to the movies and just vegging out for a few hours. Nighttime is also when I love to get creative, so I’m continuously cooking up new recipes and heading back into the kitchen to trial them out.

What ‘makes your day’? If I’ve managed to get a good nights sleep and fit in my exercise I’m a happy girl! I like routine and structure in my life.

Who’s your fashion icon? I know what looks good on me and I know what doesn’t look good. I don’t really have a fashion icon, I just love classic simple designs and simplicity of how I wear my clothes…. much like the food and recipes I create.

How would you describe your style? Simple, casual, sporty, classic. My clothes are never too busy and I like it simple. I love black, denim and emerald green. I like simple classic designs, nothing fancy or layered – timeless and fresh. I like to keep my make up and hair natural. I prefer a dewy finish and lighter coverage on my face.

Three products you can’t live without? I love my rose hip oil and use it morning and night before I go to bed. I also love spritzing my face with rose water or a simple Avene mist – it stops my skin from drying out during the day and keeps me fresh.
I’m in love with Terry Baume de rose lip balm, it’s rose scented and leaves my lips plump and moisturised all day.

4 fave songs on your iPod? I love any thing French! There is nothing more perfect than having French music playing while I am baking chocolate macadamia brownies, slow cooking bone broths or prepping for a photo shoot.

Fave perfume? I love Bal D’Afrique by byredo parfums. It’s glorious and I’m addicted to it.

What will you be doing 5 years time? The Healthy Chef Brand has expanded world wide. I will have Healthy Chef stores in every country. I’m healthy, fit and I’m enjoying life and growing the brand with my husband, best friend and partner Paul. We have a massive warehouse in Sydney where people can come and see us for nutritional consultations, buy Healthy Chef products and learn how to cook in our masterclasses.
