For each person put one large scoop of lemon sorbet into a blender and 100mls of Prosecco. Whizz briefly and pour into a chilled glass. You can do the same thing in a bowl with a hand whisk if you prefer.
For a Sgroppino Correcto {‘corrected’ Sgroppino} simply add a 25ml shot of vodka per person to the mix. or you could try adding a measure of Campari {so it looks soft pink, like above}, or a fruit puree, such as strawberry or peach, to make a Bellini Sgroppino.
