In Gwynnie’s latest cookbook ‘It’s All Easy’, she shares over 125 recipes that can be made in under 30 minutes that are surprisingly tasty even though they have little or no sugar, are low in fat, and many with no gluten. You’ll also find recipes using ordinary ingredients like cheese and wheat flour. As she herself says, “… it’s just sometimes easier to prepare delicious food when you can use ingredients like flour and cheese.” There’s even a special section on ‘Lunchbox ideas’ made from dinner leftovers and easy-to-throw-together lunches. Sounds good ha? Here’s a recipe to try before you buy:
2 tbsp. coconut oil
1 large onion split in half and thinly sliced
2 cloves garlic, thinly sliced
2 tbsp. fresh ginger (finely chopped)
1 tsp. cumin
1/2 tsp. coriander
1/2 tsp. garam masala
500 gr. Carrots cut into small pieces (about 2.5 cm. Long)
720 ml. chicken or vegetable stock
Freshly ground black pepper
Warm coconut oil over medium heat and add onion and some salt. Sauté them on low heat for about 20 minutes until the onions feels soft. Add garlic and ginger and saute for about one minute. Then add the cumin, coriander and garam masala, also sauté for about one minute.
Then add carrots, chicken or vegetable stock and a little salt. Then bring it all to a boil and then reduce the heat and simmer for about 20 minutes – or until the carrots are mørre. Finally, you put the mixture in a blender and blend. Season the soup with salt and pepper, and voila! your soup is ready to serve.
